Lazy Gourmet, episode 2
In addition to being supremely lazy when it comes to cooking on the weeknights, I am also a noted Francophile. (see: the name of my blog, my Twitter handle, everything in my bedroom, my minor in college). I love a good French meal (that excludes cheese, natch), but I need it to be simple and quick to prepare for it to happen Monday through Friday. Enter sole meunière, the dish with the fancy name and low-maintenance prep. I’d be lying if I didn’t say I was inspired to make this dish by Julia Child’s mention of it in her book My Life In France. This was one of the first things she ate when she arrived in France with her husband.
I doubt that she’d approve with my label that this is something for lazy people, but c’est la vie.
You will need:
Flour
Kosher salt
Black pepper
2 Sole Fillets for each person
A stick of butter
Half of a lemon
Some parsley
Some olive oil
A clove of garlic
One shallot
Combine flour (about 1/2 cup, maybe less depending on how many people you are serving), salt, and pepper in a shallow plate. Coat the bottom of a skillet in Olive Oil, add three tablespoons of butter, melt on medium heat. Dredge sole in flour/pepper/salt mixture. Lower heat to medium low and cook each side of the fillet for two minutes or until brown. Transfer fillets to serving plates. In the same pan, add the rest of your butter, add garlic and shallot, lightly sautee. Add parsley, let the mixture simmer down for a minute or so and spoon over your filets. Sprinkle with salt and pepper.
I usually serve this with spinach (made in the microwave by putting fresh spinach in a bowl with a few tablespoons of water and covering with a plate), and red potatoes (cooked in the microwave).
Dinner on the table in 20 minutes or less.
