I am calling these little recipe entries my Lazy Gourmet episodes. Because, honestly…I love cooking (and look at me, I clearly love to eat), but typically when I get home from work, I would prefer the food to be prepared for me.
Nothing, however, is better than homecooked meal and the glory of sitting in your sweats and catching up on last night’s episode of The Daily Show (an episode you maybe wanted to watch but you’re getting old so you fell asleep before 11). There are a dozen or so go-to dishes that I can usually make with limited effort, a small number of ingredients and a limited amount of prep work. Here is the first!
You will need:
A carton of grape tomatoesA small white onionA clove or two of garlicSriracha sauceSoy SaucePork ChopsTwo tablespoons of Olive OilA little bit of flourSalt & pepperWaterChop garlic and onions, set aside. Season your pork chops with salt & pepper and one clove of garlic. Coat the bottom of a skillet with Olive Oil, heat to medium. Sprinkle flour on your Pork Chops (doesn’t need to be too much, just enough to get them brown in the pan). Brown Chops on both sides. Remove from pan, place on paper towels. Sweat onions and remaining garlic in skillet. Add browned Pork Chops, reduce heat to medium low. Add tomatoes, sriracha (about 2 tablespoons), 3 tablespoons of Soy Sauce and a 1/3 a cup of water. Cover pan and simmer for 45 minutes. Serve over rice or noodles.
